Middle Eastern Sausage and Peppers Skillet

Ingredients

  • 2 tablespoons olive oil
  • 1 pound lamb sausage, casings removed
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Flaky sea salt, to taste
  • Black pepper, to taste
  • 1 cup Greek yogurt, for serving

Method

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the lamb sausage, breaking it into pieces, and cook until browned, about 6-8 minutes. Transfer the sausage to a plate and set aside.
  2. In the same skillet, add the remaining tablespoon of olive oil. Add the sliced red and yellow bell peppers and onion. Cook, stirring occasionally, until the vegetables start to soften, about 5 minutes.
  3. Stir in the minced garlic, ground cumin, smoked paprika, ground coriander, and cayenne pepper. Cook for 1-2 minutes until the spices are fragrant.
  4. Return the sausage to the skillet. Stir to combine all ingredients and cook for an additional 5 minutes, allowing the flavors to meld together.
  5. Season with flaky sea salt and black pepper to taste. Stir in the fresh parsley and mint just before serving.
  6. Serve warm, with a dollop of Greek yogurt on the side for each portion.
