Middle Eastern Lemon Lentil Soup

This Middle Eastern-inspired lemon lentil soup is perfect for any season. It's light yet satisfying, making it a great option for a healthy meal. Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup red lentils, rinsed
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1 lemon, juice and zest
  • Flaky sea salt, to taste
  • Black pepper, to taste
  • 1/4 cup fresh cilantro, chopped

Method

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the rinsed red lentils, vegetable broth, ground cumin, and ground turmeric. Bring to a boil.
  4. Reduce the heat to low and let simmer for 20-25 minutes or until the lentils are tender.
  5. Stir in the juice and zest of the lemon. Season with flaky sea salt and black pepper to taste.
  6. Remove from heat and stir in the chopped fresh cilantro. Serve the soup hot with additional lemon wedges if desired.
