Mexican Lime and Mango Tart

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1 can (14 oz) sweetened condensed milk
- 3/4 cup fresh lime juice
- 1 tablespoon lime zest
- 2 large egg yolks
- 1 ripe mango, peeled and thinly sliced
- Whipped cream, for serving
Method
- Preheat the oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs and granulated sugar. Add the melted butter and stir until the mixture is well combined.
- Press the mixture evenly into a 9-inch tart pan with a removable bottom. Bake for 10 minutes, then allow to cool completely.
- In a large bowl, whisk together the sweetened condensed milk, lime juice, lime zest, and egg yolks until smooth.
- Pour the lime mixture into the prepared crust and spread evenly. Bake for 15 minutes, or until the filling is set. Cool to room temperature, then refrigerate for at least 2 hours.
