Mediterranean Roasted Vegetable Feta Bake

This Mediterranean vegetable bake is a fantastic way to enjoy seasonal winter produce. Bursting with flavor, the dish combines roasted vegetables with the richness of feta cheese, offering a hearty and healthy meal that is perfect for beginner cooks. Serve it with crusty bread for a complete meal.

Ingredients

  • 2 tablespoons olive oil
  • 2 medium zucchinis, sliced
  • 1 large red bell pepper, chopped
  • 1 medium eggplant, cubed
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 200 g feta cheese, crumbled
  • Fresh parsley, for garnish

Method

  1. Preheat your oven to 200°C (400°F).
  2. In a large baking dish, combine the sliced zucchinis, chopped red bell pepper, cubed eggplant, and sliced red onion.
  3. Drizzle the olive oil over the vegetables and add the minced garlic, dried oregano, salt, and black pepper. Toss to combine and evenly coat the vegetables.
  4. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and lightly charred.
  5. Remove the baking dish from the oven and sprinkle crumbled feta cheese over the roasted vegetables.
  6. Return the dish to the oven for another 5-7 minutes, until the feta is slightly melted and golden.
  7. Garnish the dish with freshly chopped parsley before serving.
