Mediterranean Roasted Vegetable Feta Bake

Ingredients
- 2 tablespoons olive oil
- 2 medium zucchinis, sliced
- 1 large red bell pepper, chopped
- 1 medium eggplant, cubed
- 1 red onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 200 g feta cheese, crumbled
- Fresh parsley, for garnish
Method
- Preheat your oven to 200°C (400°F).
- In a large baking dish, combine the sliced zucchinis, chopped red bell pepper, cubed eggplant, and sliced red onion.
- Drizzle the olive oil over the vegetables and add the minced garlic, dried oregano, salt, and black pepper. Toss to combine and evenly coat the vegetables.
- Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and lightly charred.
- Remove the baking dish from the oven and sprinkle crumbled feta cheese over the roasted vegetables.
- Return the dish to the oven for another 5-7 minutes, until the feta is slightly melted and golden.
- Garnish the dish with freshly chopped parsley before serving.
