Mango Cardamom Phirni

Phirni is a delightful Indian dessert that combines creamy rice pudding with the vibrant flavors of cardamom and fresh mango. Ingredients

  • 1/4 cup basmati rice
  • 3 cups whole milk
  • 1/2 cup sugar
  • 1/4 cup fresh mango puree
  • 1/2 teaspoon ground cardamom
  • 1 tablespoon sliced almonds
  • Pinch of saffron strands
  • Flaky sea salt, to taste

Method

  1. Rinse the basmati rice under cold water until the water runs clear. Drain and let it dry for a few minutes.
  2. Grind the dried rice into a coarse powder using a spice grinder or mortar and pestle.
  3. In a heavy-bottomed saucepan, bring the whole milk to a boil. Reduce the heat to low and add the ground rice, stirring continuously to avoid lumps.
  4. Add the sugar and continue cooking on low heat, stirring frequently, until the mixture thickens and the rice is cooked, about 20 minutes.
  5. Stir in the mango puree, ground cardamom, a pinch of saffron strands, and a pinch of flaky sea salt. Mix well and cook for another 5 minutes.
  6. Remove from heat and allow it to cool slightly. Pour into serving bowls and garnish with sliced almonds.
  7. Refrigerate for at least 30 minutes before serving to allow the flavors to meld and the phirni to set.
