Loaded Grilled Cheese Melt

Turn a simple grilled cheese into a loaded, satisfying meal. Perfect for any time of the year and made in just one pan, this recipe is both indulgent and convenient.

Ingredients

  • 8 slices gluten-free bread
  • 8 tablespoons unsalted butter, softened
  • 2 cups shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1 cup sliced cherry tomatoes
  • 1/2 cup caramelized onions
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil

Method

  1. Preheat your oven to 350°F (175°C).
  2. Spread 1 tablespoon of butter on one side of each bread slice.
  3. Heat olive oil in a large oven-safe skillet over medium heat.
  4. Place 4 slices of bread, buttered side down, in the skillet. Top each with a layer of cheddar cheese, crumbled bacon, sliced tomatoes, and caramelized onions.
  5. Season with flaky sea salt and freshly ground black pepper to taste.
  6. Top with the remaining slices of bread, buttered side up.
  7. Cook until the bottom is golden brown, about 3-4 minutes, then carefully flip the sandwiches.
  8. Transfer the skillet to the preheated oven and bake until the cheese is fully melted and the bread is golden brown, about 10-15 minutes.
  9. Remove from the oven and let cool for a minute before slicing in half and serving.
