Loaded Dairy-Free Baked Potato
This recipe makes a classic loaded baked potato that's both hearty and flavorful. It's perfect for a spring meal and is entirely dairy-free, ensuring everyone at the table can enjoy!
Ingredients
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked and crumbled bacon
- 1/2 cup chopped green onions
- 1 cup shredded dairy-free cheese
- 1/2 cup unsweetened coconut yogurt
- Flaky sea salt, to taste
Method
- Preheat your oven to 400°F (200°C).
- Wash and dry the russet potatoes. Prick each potato several times with a fork.
- Rub the potatoes with olive oil and sprinkle them with salt and black pepper. Place them directly on the oven rack and bake for 60 minutes, or until tender.
- Remove the potatoes from the oven and let them cool slightly. Cut a slit down each potato and gently push the ends toward the center to open them up.
- Top each potato with crumbled bacon, chopped green onions, shredded dairy-free cheese, and a dollop of coconut yogurt.
- Season to taste with flaky sea salt and serve warm.
