Loaded Dairy-Free Baked Potato

This recipe makes a classic loaded baked potato that's both hearty and flavorful. It's perfect for a spring meal and is entirely dairy-free, ensuring everyone at the table can enjoy!

Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked and crumbled bacon
  • 1/2 cup chopped green onions
  • 1 cup shredded dairy-free cheese
  • 1/2 cup unsweetened coconut yogurt
  • Flaky sea salt, to taste

Method

  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the russet potatoes. Prick each potato several times with a fork.
  3. Rub the potatoes with olive oil and sprinkle them with salt and black pepper. Place them directly on the oven rack and bake for 60 minutes, or until tender.
  4. Remove the potatoes from the oven and let them cool slightly. Cut a slit down each potato and gently push the ends toward the center to open them up.
  5. Top each potato with crumbled bacon, chopped green onions, shredded dairy-free cheese, and a dollop of coconut yogurt.
  6. Season to taste with flaky sea salt and serve warm.
