Ingredients
- 2 tablespoons sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon gochujang
- 2 cloves garlic, minced
- 1 medium carrot, julienned
- 1 red bell pepper, sliced
- 1 zucchini, sliced into half moons
- 1 cup shiitake mushrooms, sliced
- 2 green onions, sliced
- Flaky sea salt, to taste
Method
- In a large pan over medium heat, add the sesame oil and let it warm up for about 1 minute.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the gochujang and soy sauce, mixing well to combine for another 30 seconds.
- Add the carrot, red bell pepper, zucchini, and shiitake mushrooms to the pan. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- Toss in the sliced green onions and season with flaky sea salt to taste. Stir everything together for 1 more minute.
- Remove from heat and serve immediately, garnished with additional green onions if desired.
