This simple, homemade apple pie is warm and comforting, perfect for an autumn afternoon. With just a few ingredients, you can create a dessert that will fill your home with the smell of fresh-baked goodness.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, chilled and diced
  • 6 to 8 tablespoons ice water
  • 6 to 8 Granny Smith apples, peeled, cored, and sliced
  • 3/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter

Method

  1. In a large bowl, combine the flour and salt. Add the chilled, diced butter and blend with a pastry cutter until the mixture resembles coarse crumbs.
  2. Stir in the ice water, a tablespoon at a time, until the dough forms a ball. Divide the dough in half and shape into discs. Wrap each in plastic wrap and refrigerate for at least 1 hour.
  3. Preheat the oven to 425°F (220°C). Roll out one disc of dough on a floured surface to fit a 9-inch pie plate. Place the crust in the pie plate and trim the edges.
  4. In a bowl, toss the apple slices with sugar and cinnamon until well coated. Pour the apple mixture into the pie crust and dot with butter.
  5. Roll out the second disc of dough and place over the apples. Seal and flute the edges. Cut several slits in the top to allow steam to escape.
  6. Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for 35 to 45 minutes, or until apples are soft and crust is golden brown.
  7. Allow the pie to cool on a wire rack before serving.
