Hearty Vietnamese Chicken Salad

This Hearty Vietnamese Chicken Salad is a great way to enjoy fresh flavors of spring. With tender chicken, crisp vegetables, and a tangy dressing, it's both satisfying and healthy. A little fish sauce adds a classic Vietnamese touch.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups mixed salad greens
  • 1 cup shredded carrots
  • 1/2 cup sliced cucumbers
  • 1/4 cup roasted peanuts, chopped
  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon sugar
  • 1 tablespoon olive oil
  • Fresh cilantro, for garnish
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Bring a pot of water to a gentle boil. Add the chicken breasts and poach until cooked through, about 12 minutes. Remove the chicken and let it cool slightly.
  2. While the chicken is cooking, prepare the dressing by whisking together fish sauce, lime juice, sugar, and olive oil in a small bowl.
  3. Once the chicken is cool enough to handle, shred it into bite-sized pieces.
  4. In a large mixing bowl, combine salad greens, shredded carrots, cucumbers, and chicken. Toss with the dressing until evenly coated.
  5. Divide the salad among serving plates. Sprinkle with chopped peanuts and garnish with fresh cilantro. Season with flaky sea salt and black pepper to taste.
