Hearty Vietnamese Chicken Salad
This Hearty Vietnamese Chicken Salad is a great way to enjoy fresh flavors of spring. With tender chicken, crisp vegetables, and a tangy dressing, it's both satisfying and healthy. A little fish sauce adds a classic Vietnamese touch.
Ingredients
- 2 boneless, skinless chicken breasts
- 4 cups mixed salad greens
- 1 cup shredded carrots
- 1/2 cup sliced cucumbers
- 1/4 cup roasted peanuts, chopped
- 3 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- 1 tablespoon olive oil
- Fresh cilantro, for garnish
- Flaky sea salt, to taste
- Black pepper, to taste
Method
- Bring a pot of water to a gentle boil. Add the chicken breasts and poach until cooked through, about 12 minutes. Remove the chicken and let it cool slightly.
- While the chicken is cooking, prepare the dressing by whisking together fish sauce, lime juice, sugar, and olive oil in a small bowl.
- Once the chicken is cool enough to handle, shred it into bite-sized pieces.
- In a large mixing bowl, combine salad greens, shredded carrots, cucumbers, and chicken. Toss with the dressing until evenly coated.
- Divide the salad among serving plates. Sprinkle with chopped peanuts and garnish with fresh cilantro. Season with flaky sea salt and black pepper to taste.
