Hearty Vegetable Stew

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 medium potatoes, diced
  • 2 cups vegetable broth
  • 1 can (15 ounces) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup green beans, trimmed and halved

Method

  1. Heat the olive oil in a large pot over medium heat. Add the onion and sauté for about 5 minutes until translucent.
  2. Add the garlic and cook for another minute until fragrant.
  3. Stir in the carrots and potatoes, cooking for another 5 minutes.
  4. Add the vegetable broth, diced tomatoes, thyme, and rosemary. Bring to a boil, then reduce the heat to a simmer.
  5. Cover and let simmer for about 45 minutes, stirring occasionally, until the vegetables are tender.
  6. Add the green beans and continue to simmer for another 10 minutes.
  7. Season with salt and pepper to taste before serving.
