Hearty Taco Salad

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels, cooked
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup salsa

Method

  1. In a large skillet over medium heat, cook the ground beef until browned, about 8 minutes. Drain excess fat.
  2. Add the taco seasoning to the beef, along with 1/4 cup of water, and stir to combine. Cook for an additional 2 minutes, then remove from heat.
  3. In a large serving bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, and corn kernels.
  4. Top the salad with the cooked taco beef mixture and sprinkle with shredded cheddar cheese.
  5. Drizzle the salsa over the salad, toss to combine, and serve immediately.
