Hearty Rice and Chicken Bowl
This Hearty Rice and Chicken Bowl is perfect for those chilly winter evenings when you crave something warm and filling. With seasoned chicken, fluffy rice, and an array of vegetables, it's a meal that will satisfy the entire family.
Ingredients
- 2 tablespoons olive oil
- 1 1/2 pounds boneless chicken thighs, cut into 1 inch pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 cup uncooked brown rice
- 2 cups chicken broth
- 1 medium onion, diced
- 2 carrots, sliced
- 1 red bell pepper, chopped
- 1 cup frozen peas
- 1 tablespoon soy sauce
Method
- Heat the olive oil in a large skillet over medium-high heat.
- Season the chicken pieces with salt, pepper, and garlic powder. Add the chicken to the skillet and cook until browned on all sides, about 8-10 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and cook until softened, about 5 minutes.
- Stir in the sliced carrots and chopped red bell pepper, cooking for another 3 minutes until they begin to soften.
- Add the uncooked brown rice to the skillet and stir to combine with the vegetables.
- Pour in the chicken broth and soy sauce, bringing the mixture to a boil.
- Reduce the heat to low, cover the skillet, and let it simmer for 30 minutes or until the rice is cooked and tender.
- Return the cooked chicken to the skillet, add the frozen peas, and stir to combine. Cook for an additional 5 minutes until the chicken is heated through and the peas are tender.
- Serve hot, with additional soy sauce if desired.
