Hearty One-Pot Chili
This hearty one-pot chili is perfect for any day of the week. Using common pantry staples, it's an easy and delicious meal that will keep you coming back for more.
Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 pound ground beef
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1 (28-ounce) can diced tomatoes
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 2 cups beef broth
- Salt, to taste
- Black pepper, to taste
Method
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and chopped bell pepper, cooking for another 2 minutes.
- Add the ground beef, breaking it up with a spoon, and cook until browned.
- Mix in the chili powder, cumin, smoked paprika, and oregano, and cook for 1 minute.
- Pour in the diced tomatoes, kidney beans, black beans, and beef broth. Stir to combine.
- Bring the chili to a boil, then reduce the heat to low and let it simmer uncovered for 60 minutes, stirring occasionally.
- Season the chili with salt and black pepper to taste before serving.
