Hearty One-Pan Pot Roast

This hearty pot roast is an all-time favorite, perfect for a comforting family dinner. With tender beef and flavorful vegetables, it’s a dish that brings everyone to the table.

Ingredients

  • 3 pounds boneless beef chuck roast, trimmed
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 large carrots, peeled and cut into chunks
  • 3 medium potatoes, cut into chunks
  • 2 large onions, quartered
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Method

  1. Preheat your oven to 325°F (165°C).
  2. Heat the olive oil in a large ovenproof pot over medium-high heat. Season the beef roast with salt and pepper.
  3. Sear the roast in the pot until browned on all sides, about 8 minutes total. Remove the roast and set aside.
  4. Add the carrots, potatoes, onions, and garlic to the pot. Cook for about 5 minutes until the onions are soft.
  5. Pour in the beef broth and red wine, stirring to combine. Return the roast to the pot, adding the thyme and rosemary on top.
  6. Cover the pot with a lid and transfer to the preheated oven. Roast for 3 to 3.5 hours or until the beef is tender and easily shredded.
  7. Remove from the oven and let it rest for 10 minutes. Slice the beef and serve with the vegetables and sauce.
