Hearty Nordic Salad

This satisfying main-dish salad is inspired by Nordic flavors, featuring smoked salmon, fresh dill, and hearty potatoes. It's perfect for a healthy lunch or dinner, any time of the year.

Ingredients

  • 4 cups mixed salad greens
  • 1 pound baby potatoes, boiled and quartered
  • 8 ounces smoked salmon, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Boil the baby potatoes in salted water until tender, about 10 minutes. Drain and let cool slightly.
  2. In a large bowl, combine the mixed salad greens, cooled potatoes, smoked salmon, red onion, and fresh dill.
  3. In a small bowl, whisk together the olive oil, lemon juice, flaky sea salt, and black pepper.
  4. Pour the dressing over the salad and gently toss to combine.
  5. Serve immediately, garnishing with additional dill if desired.
