Hearty Nordic Salad
This satisfying main-dish salad is inspired by Nordic flavors, featuring smoked salmon, fresh dill, and hearty potatoes. It's perfect for a healthy lunch or dinner, any time of the year.
Ingredients
- 4 cups mixed salad greens
- 1 pound baby potatoes, boiled and quartered
- 8 ounces smoked salmon, sliced
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh dill, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Flaky sea salt, to taste
- Black pepper, to taste
Method
- Boil the baby potatoes in salted water until tender, about 10 minutes. Drain and let cool slightly.
- In a large bowl, combine the mixed salad greens, cooled potatoes, smoked salmon, red onion, and fresh dill.
- In a small bowl, whisk together the olive oil, lemon juice, flaky sea salt, and black pepper.
- Pour the dressing over the salad and gently toss to combine.
