Hearty Meatloaf

Ingredients
- 1 1/2 pounds ground beef
- 1/2 cup almond flour
- 1/2 cup grated Parmesan cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 1/4 cup unsweetened ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon dried thyme
- Olive oil, for greasing
Method
- Preheat the oven to 375°F (190°C) and lightly grease a loaf pan with olive oil.
- In a large bowl, combine ground beef, almond flour, Parmesan cheese, onion, garlic, eggs, ketchup, Worcestershire sauce, mustard, salt, pepper, and thyme.
- Mix the ingredients thoroughly with your hands until well combined but do not overmix.
- Transfer the mixture to the prepared loaf pan and press it down evenly.
- Bake the meatloaf in the preheated oven for 60 minutes or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing. Serve warm.
