Hearty Loaded Grilled Cheese

Ingredients

  • 8 slices of whole grain bread
  • 4 tablespoons unsalted butter, softened
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup cooked turkey bacon, crumbled
  • 1/2 cup caramelized onions
  • 1 cup fresh baby spinach
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. Preheat a large non-stick skillet over medium heat.
  2. Butter one side of each slice of bread generously.
  3. Place four slices of bread, buttered side down, on a clean work surface.
  4. Evenly distribute half of the shredded cheddar cheese on the bread slices.
  5. Add crumbled turkey bacon, caramelized onions, and baby spinach on top of the cheese.
  6. Top with the remaining cheese and cover with the other bread slices, buttered side up.
  7. Carefully place the sandwiches in the preheated skillet. Cook for 3-4 minutes per side until the bread is golden brown and the cheese is melted.
  8. Press down gently with a spatula for even toasting.
  9. Remove from heat and let the sandwiches rest for a minute before slicing.
  10. Season with flaky sea salt and freshly ground black pepper to taste before serving.
