Hearty Korean-Inspired Chicken Salad

This hearty chicken salad is perfect for a summer meal. It's light yet filling, with a touch of Korean-inspired flavors from sesame oil and soy sauce. Ideal for a healthy dinner, it's a dish that everyone will enjoy.

Ingredients

  • 1 pound boneless, skinless chicken breast
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 clove garlic, minced
  • 4 cups mixed salad greens
  • 1 cucumber, sliced
  • 1/4 cup chopped green onions

Method

  1. Preheat a grill or skillet over medium heat.
  2. In a small bowl, combine the soy sauce, sesame oil, rice vinegar, and minced garlic. Mix well to create a marinade.
  3. Place the chicken breasts in a shallow dish and pour the marinade over them. Let it sit for about 5 minutes.
  4. Grill or cook the chicken breasts for 5-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let rest for a few minutes.
  5. Slice the cooked chicken into strips.
  6. In a large bowl, combine the salad greens, cucumber slices, and chopped green onions.
  7. Add the chicken strips on top of the salad. Drizzle with additional sesame oil if desired and toss gently to combine.
