Hearty Indian Chicken Salad

This chicken salad is hearty and satisfying, with a hint of Indian spices for a unique twist. It's perfect for a healthy meal any time of the year.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast, cut into strips
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup plain Greek yogurt
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Heat the olive oil in a skillet over medium heat. Add the chicken strips, ground cumin, and ground coriander. Cook for 6-8 minutes, or until the chicken is fully cooked and golden brown.
  2. In a large salad bowl, combine the mixed salad greens, cherry tomatoes, and red onion.
  3. Once the chicken is cooked, let it cool slightly and then add it to the salad.
  4. Add the Greek yogurt to the salad as a dressing, tossing everything together gently to combine. Season with sea salt and black pepper to taste.
  5. Serve the salad immediately, or refrigerate for up to 2 hours before serving for a chilled version.
