Hearty Indian Chicken Salad
This chicken salad is hearty and satisfying, with a hint of Indian spices for a unique twist. It's perfect for a healthy meal any time of the year.
Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breast, cut into strips
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup plain Greek yogurt
- Flaky sea salt, to taste
- Black pepper, to taste
Method
- Heat the olive oil in a skillet over medium heat. Add the chicken strips, ground cumin, and ground coriander. Cook for 6-8 minutes, or until the chicken is fully cooked and golden brown.
- In a large salad bowl, combine the mixed salad greens, cherry tomatoes, and red onion.
- Once the chicken is cooked, let it cool slightly and then add it to the salad.
- Add the Greek yogurt to the salad as a dressing, tossing everything together gently to combine. Season with sea salt and black pepper to taste.
- Serve the salad immediately, or refrigerate for up to 2 hours before serving for a chilled version.
