Hearty Grilled Chicken Salad

This Hearty Grilled Chicken Salad is perfect for a summer dinner. It's easy to make and full of flavor, with fresh vegetables and a light dressing that will leave you feeling satisfied.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 large head of romaine lettuce, chopped
  • 1 pint cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 cup Spanish olives, sliced
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste

Method

  1. Preheat the grill to medium-high heat.
  2. Rub the chicken breasts with 1 tablespoon of olive oil, smoked paprika, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side, or until cooked through and juices run clear.
  4. While the chicken is grilling, in a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, and Spanish olives.
  5. In a small bowl, whisk together the remaining olive oil and balsamic vinegar. Season with salt and pepper to taste.
  6. Slice the grilled chicken and toss it with the salad. Drizzle with the balsamic dressing and serve immediately.
