Hearty Chickpea and Spinach Salad

This hearty chickpea and spinach salad is perfect for an autumn meal. It combines creamy chickpeas, fresh spinach, and a lightly spiced dressing for a delightful main dish. Quick to prepare, it's a healthy, flavorful choice for dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1 can chickpeas, drained and rinsed
  • 6 cups fresh spinach leaves, washed
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 lemon, juiced

Method

  1. In a large skillet, heat olive oil over medium heat. Add ground cumin and garam masala, cooking for 1 minute until fragrant.
  2. Add the drained chickpeas to the skillet and stir to coat with the spices. Cook for 5-7 minutes until the chickpeas start to brown slightly.
  3. In a large bowl, combine fresh spinach leaves, thinly sliced red onion, and chopped cilantro.
  4. Add the warm chickpeas to the spinach mixture. Drizzle with lemon juice and toss gently to combine.
  5. Season the salad with flaky sea salt and freshly ground black pepper to taste.
  6. Serve immediately, allowing the spinach to wilt slightly from the warmth of the chickpeas.
