Hearty Beef Chili

This hearty beef chili is perfect for a family dinner or weekend gathering. Packed with rich flavors and just the right amount of spice, it's a dish that warms the soul.

Ingredients

  • 2 tablespoons olive oil
  • 1 1/2 pounds ground beef
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tablespoons tomato paste
  • 1 can (28 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper, to taste
  • 1 cup beef broth
  • 1/4 cup fresh cilantro, chopped
  • Shredded cheddar cheese, for serving

Method

  1. In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
  2. Add the diced onion, minced garlic, and diced bell peppers to the pot. Cook for about 5 minutes until the vegetables are softened.
  3. Stir in the tomato paste, chili powder, cumin, smoked paprika, and cayenne pepper. Cook for an additional 2 minutes.
  4. Add the diced tomatoes, kidney beans, black beans, and beef broth. Stir well to combine.
  5. Bring the chili to a boil, then reduce the heat to low. Cover and simmer for 1 to 1.5 hours, stirring occasionally, until the flavors meld together.
  6. Season the chili with salt and pepper to taste. Stir in the fresh cilantro before serving.
  7. Serve hot, garnished with shredded cheddar cheese, if desired.
