Healthy Chicken and Rice Bowl

Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into small cubes
- 1 teaspoon garlic powder
- Flaky sea salt, to taste
- Black pepper, to taste
- 1 cup uncooked brown rice
- 2 cups water
- 1 cup asparagus, trimmed and cut into 1-inch pieces
- 1 red bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1 lemon, juiced
Method
- In a medium saucepan, bring 2 cups of water to a boil. Add the brown rice, reduce heat to low, cover, and simmer for 30-35 minutes until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
- While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken cubes with garlic powder, salt, and pepper.
- Add the chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown. Transfer to a plate and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the asparagus and red bell pepper, and sauté for 4-5 minutes until the vegetables are tender-crisp.
- Return the chicken to the skillet and add the cooked rice. Stir to combine everything well, and cook for another 2-3 minutes until heated through.
- Remove from heat, stir in the chopped parsley and lemon juice. Adjust seasoning with salt and pepper if needed.
- Serve the chicken and rice mixture warm in bowls, garnished with additional parsley if desired.
