Grilled Vegetable Tostadas with Avocado Crema

Ingredients

  • 8 small corn tostadas
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 small red onion, sliced
  • 1 cup cherry tomatoes, halved
  • Flaky sea salt, to taste
  • Black pepper, to taste
  • 2 ripe avocados, peeled and pitted
  • 1 lime, juiced
  • 1/4 cup fresh cilantro leaves
  • 1/4 teaspoon ground cumin
  • Olive oil, for drizzling

Method

  1. Preheat a grill or grill pan over medium-high heat.
  2. In a bowl, toss the red bell pepper, zucchini, red onion, and cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper.
  3. Grill the vegetables for 5-7 minutes, turning occasionally, until charred and tender.
  4. Meanwhile, in a food processor, blend the avocados, lime juice, cilantro, and ground cumin until smooth. Season with salt and pepper to taste.
  5. Spread the avocado crema over each tostada, then top with the grilled vegetables.
  6. Drizzle with olive oil and serve immediately.
