Grilled Summer Vegetable Bowl with Lemon Herb Dressing

Ingredients
- 2 medium zucchinis, sliced into 1/4 inch rounds
- 2 medium red bell peppers, seeded and cut into strips
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh basil, chopped
- 1 tablespoon olive oil, for dressing

Method
- Preheat a grill or grill pan over medium-high heat.
- In a large bowl, toss the zucchini, bell peppers, and cherry tomatoes with 1 tablespoon olive oil, salt, and black pepper.
