Grilled Pork Tenderloin with Spring Salsa

Ingredients

  • 1 1/2 pounds pork tenderloin, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup cherry tomatoes, quartered
  • 1 small red onion, finely chopped
  • 1/4 cup cilantro leaves, chopped
  • 1 jalapeño, seeded and minced
  • 1 tablespoon lime juice, freshly squeezed
  • 1 avocado, diced

Method

  1. Preheat the grill to medium-high heat.
  2. Rub the pork tenderloin with olive oil, ground cumin, smoked paprika, flaky sea salt, and freshly ground black pepper.
  3. Place the pork tenderloin on the grill and cook for about 20-25 minutes, turning occasionally, until the internal temperature reaches 145°F.
  4. While the tenderloin is grilling, prepare the spring salsa by combining cherry tomatoes, red onion, cilantro, jalapeño, lime juice, and avocado in a medium bowl. Season with salt and pepper to taste.
  5. Once the pork tenderloin is done, remove it from the grill and let it rest for 5 minutes before slicing.
  6. Serve the sliced pork tenderloin topped with the fresh spring salsa.
