Grilled Chicken Winter Salad

Ingredients
- 1 pound boneless chicken breasts
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon olive oil
- 8 cups mixed winter greens (such as kale, spinach, and arugula)
- 1/2 cup roasted peanuts
- 1/4 cup shredded carrots
- 2 scallions, sliced
- 2 tablespoons rice vinegar
- Flaky sea salt, to taste
- Black pepper, to taste
Method
- Preheat a grill pan over medium heat. Season the chicken breasts with soy sauce, sesame oil, salt, and pepper.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked and lightly charred. Remove from the heat and let it rest for a few minutes.
- Slice the chicken into strips.
- In a large mixing bowl, combine the winter greens, roasted peanuts, shredded carrots, and scallions.
- In a small bowl, whisk together olive oil and rice vinegar. Season with salt and pepper to taste.
- Pour the dressing over the salad and toss to combine.
- Top the salad with the sliced grilled chicken and serve immediately.
