Grilled Chicken Thai Salad

Ingredients
- 1 pound boneless chicken breast
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 garlic clove, minced
- 6 cups mixed salad greens
- 1 cucumber, sliced
- 1 red bell pepper, sliced
- 1/4 cup fresh mint leaves
- 1 lime, juiced
- Flaky sea salt, to taste
- Black pepper, to taste
Method
- Preheat the grill to medium-high heat.
- In a small bowl, mix olive oil, soy sauce, fish sauce, minced garlic, salt, and pepper. Marinate the chicken breast with the mixture for about 10 minutes.
- Grill the chicken for about 5-6 minutes on each side, or until fully cooked. Let it rest for a few minutes before slicing.
- In a large bowl, combine mixed salad greens, sliced cucumber, sliced red bell pepper, and fresh mint leaves.
- Add the sliced grilled chicken to the salad and drizzle with fresh lime juice.
- Toss everything gently to combine, and season with additional salt and pepper to taste.
