Grilled Chicken Thai Salad

This Grilled Chicken Thai Salad is perfect for a summer dinner. It's fresh, crunchy, and full of flavors with a delightful Thai twist.

Ingredients

  • 1 pound boneless chicken breast
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 garlic clove, minced
  • 6 cups mixed salad greens
  • 1 cucumber, sliced
  • 1 red bell pepper, sliced
  • 1/4 cup fresh mint leaves
  • 1 lime, juiced
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, soy sauce, fish sauce, minced garlic, salt, and pepper. Marinate the chicken breast with the mixture for about 10 minutes.
  3. Grill the chicken for about 5-6 minutes on each side, or until fully cooked. Let it rest for a few minutes before slicing.
  4. In a large bowl, combine mixed salad greens, sliced cucumber, sliced red bell pepper, and fresh mint leaves.
  5. Add the sliced grilled chicken to the salad and drizzle with fresh lime juice.
  6. Toss everything gently to combine, and season with additional salt and pepper to taste.
