Grilled Chicken Salad

This Grilled Chicken Salad is a simple, healthy meal perfect for spring. Fresh greens and grilled chicken make it satisfying and flavorful.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cups mixed baby greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup crumbled feta cheese

Method

  1. Preheat a grill or grill pan over medium-high heat.
  2. Rub the chicken breasts with 1 tablespoon of olive oil, salt, and black pepper.
  3. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let rest for 5 minutes.
  4. In a large bowl, combine the mixed baby greens, cherry tomatoes, and cucumber. Drizzle with the remaining olive oil and toss gently.
  5. Slice the grilled chicken breasts and place them on top of the salad.
  6. Sprinkle the crumbled feta cheese over the salad and serve immediately.
