Grilled Chicken Grain Bowl

This simple and flavorful grain bowl combines grilled chicken, fresh summer vegetables, and a tangy tahini dressing. Perfect for a healthy and satisfying meal, this bowl is sure to become a favorite.

Ingredients

  • 2 cups cooked quinoa
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Preheat your grill or grill pan over medium-high heat.
  2. Rub the chicken with olive oil, ground cumin, salt, and pepper. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let it rest for a few minutes before slicing.
  3. In a small bowl, whisk together the tahini, lemon juice, a pinch of salt, and a bit of water to achieve a smooth, pourable dressing.
  4. Divide the cooked quinoa among four bowls. Top with sliced grilled chicken, diced cucumber, and halved cherry tomatoes.
  5. Drizzle the tahini dressing over each bowl and serve immediately.
