Grilled Chicken Grain Bowl

Ingredients
- 2 cups cooked quinoa
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 large cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup tahini
- 2 tablespoons lemon juice
- Flaky sea salt, to taste
- Black pepper, to taste
Method
- Preheat your grill or grill pan over medium-high heat.
- Rub the chicken with olive oil, ground cumin, salt, and pepper. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let it rest for a few minutes before slicing.
- In a small bowl, whisk together the tahini, lemon juice, a pinch of salt, and a bit of water to achieve a smooth, pourable dressing.
