Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 head romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 cup croutons
  • 1/4 cup Caesar dressing
  • 4 cups vegetable broth
  • 1 cup mixed seasonal vegetables, such as carrots and celery, chopped
  • Salt and pepper, to taste

Method

  1. Preheat a grill or grill pan over medium-high heat.
  2. Rub the chicken breasts with olive oil, garlic powder, salt, and pepper.
