Grilled Chicken and Couscous Bowl

This Grilled Chicken and Couscous Bowl is both delicious and easy to make, perfect for a satisfying weeknight dinner. A hint of Moroccan spice adds a unique twist to this healthy, balanced meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, cut into strips
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 cup couscous
  • 1 1/4 cups chicken broth
  • 1 large cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Method

  1. In a large bowl, combine olive oil, ground cumin, smoked paprika, salt, and pepper. Add chicken strips and toss to coat evenly. Let marinate for at least 10 minutes.
  2. While the chicken is marinating, bring chicken broth to a boil in a small saucepan. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  3. Preheat a grill or grill pan over medium-high heat. Cook the marinated chicken strips for 4-5 minutes per side, or until cooked through and lightly charred.
  4. Divide the couscous among four bowls. Top with grilled chicken, diced cucumber, and chopped parsley.
  5. Serve with lemon wedges on the side for squeezing over the top.
