Grilled Chicken and Brothy Summer Salad

This grilled chicken salad combines fresh greens with a light, flavorful broth, making it a perfect meal for a summer evening. It's simple to prepare and packed with fresh flavors.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • 2 cups chicken broth, low-sodium

Method

  1. Preheat grill to medium-high heat. Rub the chicken breasts with olive oil, salt, and black pepper.
  2. Grill the chicken for 6-7 minutes on each side or until fully cooked. Remove from grill and let rest for 5 minutes before slicing.
  3. In a large bowl, combine the mixed salad greens, cherry tomatoes, and red onion.
  4. In a saucepan, warm the chicken broth over medium heat until just hot, but not boiling.
  5. Slice the grilled chicken and add to the salad. Drizzle the warm chicken broth over the salad right before serving. Toss gently to combine.
