Grilled Chicken and Brothy Summer Salad
This grilled chicken salad combines fresh greens with a light, flavorful broth, making it a perfect meal for a summer evening. It's simple to prepare and packed with fresh flavors.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/4 cup thinly sliced red onion
- 2 cups chicken broth, low-sodium
Method
- Preheat grill to medium-high heat. Rub the chicken breasts with olive oil, salt, and black pepper.
- Grill the chicken for 6-7 minutes on each side or until fully cooked. Remove from grill and let rest for 5 minutes before slicing.
- In a large bowl, combine the mixed salad greens, cherry tomatoes, and red onion.
- In a saucepan, warm the chicken broth over medium heat until just hot, but not boiling.
