Grilled Chicken and Avocado Salad

This Grilled Chicken and Avocado Salad is perfect for a winter dinner. Packed with protein and healthy fats, it's simple to prepare and sure to satisfy.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless chicken breasts
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 large avocados, sliced
  • 8 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled queso fresco
  • Salt and pepper, to taste

Method

  1. Preheat a grill or grill pan over medium-high heat and brush it with olive oil.
  2. In a small bowl, mix the ground cumin, chili powder, salt, and pepper. Rub this mixture over the chicken breasts.
  3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F. Remove and let rest.
  4. Slice the cooked chicken into strips.
  5. In a large bowl, combine the mixed salad greens, sliced avocados, cherry tomatoes, and grilled chicken.
  6. Sprinkle the salad with crumbled queso fresco. Drizzle with additional olive oil if desired, and season with salt and pepper to taste.
  7. Toss gently and serve immediately.
