Greek Chicken Salad with Brothy Vinaigrette

Ingredients
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into strips
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup kalamata olives, pitted and halved
- 1/4 cup feta cheese, crumbled
- 1/2 cup chicken broth
- 1 tablespoon lemon juice
Method
- In a large skillet, heat the olive oil over medium-high heat.
- Season the chicken strips with dried oregano, salt, and black pepper.
- Add the chicken to the skillet and cook for 5-7 minutes, until golden and cooked through. Remove from heat and set aside.
- In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, and kalamata olives.
