Greek Chicken Salad

This Greek Chicken Salad is a simple and flavorful meal perfect for any time of the year. It's packed with fresh vegetables, tender grilled chicken, and classic Greek flavors. A delightful choice for a healthy dinner.

Ingredients

  • 1 pound boneless chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Preheat a grill or grill pan over medium-high heat.
  2. Brush the chicken breasts with 1 tablespoon of olive oil and sprinkle with dried oregano, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let rest for a few minutes before slicing.
  4. In a large bowl, combine cherry tomatoes, cucumber, red onion, and Kalamata olives.
  5. Add the grilled chicken slices to the bowl and drizzle with the remaining olive oil. Toss gently to combine.
  6. Sprinkle the salad with crumbled feta cheese, season with salt and pepper to taste, and serve.
