Garlic Herb Sheet-Pan Salmon

This sheet-pan salmon dish is a perfect go-to for a healthy and satisfying dinner. It's easy to prepare and offers a burst of flavor with garlic, lemon, and fresh herbs. You'll love how all the ingredients come together perfectly in one pan.

Ingredients

  • 1 1/2 pounds salmon fillet, skin on
  • 1 pound baby potatoes, halved
  • 12 ounces cherry tomatoes
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon, thinly sliced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Preheat your oven to 400°F (200°C).
  2. Place the baby potatoes on a large sheet pan and drizzle with 1 tablespoon of olive oil. Sprinkle with salt and pepper, tossing to coat. Arrange the potatoes cut side down and roast for 15 minutes.
  3. While the potatoes are roasting, combine the minced garlic, fresh dill, fresh parsley, and remaining olive oil in a small bowl.
  4. Remove the sheet pan from the oven and push the potatoes to one side. Add the salmon fillet to the middle of the pan, and arrange the cherry tomatoes around it. Season the salmon and tomatoes with salt and pepper, then spread the garlic herb mixture over the salmon.
  5. Place lemon slices evenly over the salmon and return the pan to the oven. Roast for an additional 15-20 minutes, until the salmon is cooked through and flakes easily with a fork.
  6. Remove from oven and let rest for a few minutes. Serve the salmon with the roasted potatoes and tomatoes, garnished with additional fresh herbs if desired.
