Garlic Butter Shrimp and Vegetables

This garlic butter shrimp dish is packed with flavor and can be made in just one pan, making it perfect for a quick and satisfying dinner. Serve it with crusty bread or over rice to soak up the delicious sauce.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced into half-moons
  • 2 tablespoons chopped fresh parsley

Method

  1. Preheat the oven to 400°F (200°C).
  2. In a large oven-safe skillet, melt 2 tablespoons of butter over medium-high heat. Add the garlic and cook for 1 minute until fragrant.
  3. Add the shrimp to the skillet and season with salt, black pepper, and red pepper flakes. Cook for 2-3 minutes until they begin to turn pink.
  4. Remove the shrimp from the skillet and set aside. Add the remaining tablespoon of butter and olive oil to the skillet.
  5. Add the cherry tomatoes and zucchini to the skillet, and cook for 5 minutes until the vegetables are tender.
  6. Return the shrimp to the skillet, add lemon zest and lemon juice, and toss everything to combine.
  7. Transfer the skillet to the preheated oven and bake for 5-7 minutes, ensuring the shrimp are fully cooked.
  8. Remove from the oven, sprinkle with fresh parsley, and serve immediately.
