Garlic Butter Shrimp and Vegetables
This garlic butter shrimp dish is packed with flavor and can be made in just one pan, making it perfect for a quick and satisfying dinner. Serve it with crusty bread or over rice to soak up the delicious sauce.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced into half-moons
- 2 tablespoons chopped fresh parsley
Method
- Preheat the oven to 400°F (200°C).
- In a large oven-safe skillet, melt 2 tablespoons of butter over medium-high heat. Add the garlic and cook for 1 minute until fragrant.
- Add the shrimp to the skillet and season with salt, black pepper, and red pepper flakes. Cook for 2-3 minutes until they begin to turn pink.
- Remove the shrimp from the skillet and set aside. Add the remaining tablespoon of butter and olive oil to the skillet.
- Add the cherry tomatoes and zucchini to the skillet, and cook for 5 minutes until the vegetables are tender.
- Return the shrimp to the skillet, add lemon zest and lemon juice, and toss everything to combine.
- Transfer the skillet to the preheated oven and bake for 5-7 minutes, ensuring the shrimp are fully cooked.
- Remove from the oven, sprinkle with fresh parsley, and serve immediately.
