French Winter Vegetable Soup with Thyme

Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 stalks celery, sliced
- 1 medium potato, peeled and diced
- 1 teaspoon fresh thyme leaves, chopped
- 1 bay leaf
- 4 cups vegetable broth
- 1 tablespoon unsalted butter
- Flaky sea salt, to taste
- Black pepper, to taste
- Parsley, for garnish
Method
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic, cooking until the onion is translucent, about 5 minutes.
- Add the sliced carrots and celery, stirring occasionally for 5 minutes.
- Stir in the diced potato, fresh thyme, and bay leaf, cooking for another 2 minutes.
- Pour in the vegetable broth, bringing the mixture to a boil.
