Easy Weeknight Fried Rice

This fried rice recipe is perfect for a quick and comforting family dinner during the winter months. It uses everyday ingredients to create a dish that's both hearty and delicious.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup frozen mixed vegetables
  • 4 cups cooked rice, preferably cold
  • 3 tablespoons soy sauce
  • 2 large eggs, beaten
  • 2 green onions, sliced
  • Black pepper, to taste

Method

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the diced onion and cook until translucent, about 3 minutes.
  3. Stir in the minced garlic and frozen mixed vegetables, and cook for another 4 minutes.
  4. Add the cooked rice to the skillet, breaking up any clumps, and cook for 2 minutes.
  5. Drizzle the soy sauce over the rice, stirring well to combine and heat through.
  6. Push the rice to one side of the skillet and pour the beaten eggs into the space. Scramble the eggs until cooked through, then mix them into the rice.
  7. Season with black pepper and garnish with sliced green onions before serving.
