Easy Vegetable and Bean Soup

This easy-to-make vegetable and bean soup is perfect for a healthy summer dinner. It's packed with fresh veggies and beans, making it both nutritious and satisfying.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups zucchini, diced
  • 1 cup carrots, sliced
  • 1 teaspoon ground cumin
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste

Method

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Stir in the zucchini, carrots, and ground cumin. Cook for another 5 minutes until the vegetables begin to soften.
  4. Add the cannellini beans and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 20 minutes.
  5. Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro.
