Easy Vegan Rice and Protein Bowl

This easy vegan rice and protein bowl is a fulfilling and nutritious meal you can enjoy year-round. With just one pan, you'll create a satisfying dish packed with vegetables and plant-based protein.

Ingredients

  • 2 tablespoons olive oil
  • 1 cup brown rice, rinsed
  • 2 cups vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup broccoli florets
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Method

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced onion and minced garlic. Sauté until the onion is translucent, about 4 minutes.
  3. Stir in the chopped red bell pepper and broccoli florets. Cook for another 5 minutes until the vegetables soften slightly.
  4. Add the rinsed brown rice to the skillet and stir to combine with the vegetables.
  5. Pour in the vegetable broth and add the ground cumin, smoked paprika, salt, and pepper. Stir to mix well.
  6. Bring to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Stir in the drained black beans and cook for an additional 5 minutes to heat through.
  8. Remove from heat and let it rest for a few minutes. Fluff the rice with a fork.
  9. Serve hot, garnished with fresh cilantro.
