Easy Vegan Rice and Protein Bowl
This easy vegan rice and protein bowl is a fulfilling and nutritious meal you can enjoy year-round. With just one pan, you'll create a satisfying dish packed with vegetables and plant-based protein.
Ingredients
- 2 tablespoons olive oil
- 1 cup brown rice, rinsed
- 2 cups vegetable broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup broccoli florets
- 1 can (15 oz) black beans, drained and rinsed
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Method
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and minced garlic. Sauté until the onion is translucent, about 4 minutes.
- Stir in the chopped red bell pepper and broccoli florets. Cook for another 5 minutes until the vegetables soften slightly.
- Add the rinsed brown rice to the skillet and stir to combine with the vegetables.
- Pour in the vegetable broth and add the ground cumin, smoked paprika, salt, and pepper. Stir to mix well.
- Bring to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the rice is cooked and the liquid is absorbed.
- Stir in the drained black beans and cook for an additional 5 minutes to heat through.
- Remove from heat and let it rest for a few minutes. Fluff the rice with a fork.
- Serve hot, garnished with fresh cilantro.
