Easy Snickerdoodle Crumble Pie

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 store-bought pie crust

Method

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, cream of tartar, salt, and 1 teaspoon of cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Place the pie crust into a 9-inch pie pan and press lightly to fit snugly.
  7. Spread the snickerdoodle dough evenly over the pie crust.
  8. Sprinkle the remaining 1 teaspoon of cinnamon evenly over the top of the dough.
  9. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and set.
  10. Allow to cool slightly before slicing and serving.
