Easy Sheet-Pan Meatloaf Dinner

Ingredients

  • 1 1/2 pounds ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg, beaten
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 pound baby potatoes, halved
  • 1 pound carrots, sliced into 1-inch pieces
  • 2 tablespoons olive oil
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, beaten egg, chopped onion, minced garlic, ketchup, Worcestershire sauce, 1 teaspoon salt, and 1/2 teaspoon ground black pepper. Mix until well combined.
  3. Shape the meat mixture into a loaf and place it in the center of a large sheet pan.
  4. In a separate bowl, toss the halved baby potatoes and sliced carrots with olive oil, flaky sea salt, and freshly ground black pepper to taste. Arrange the vegetables around the meatloaf on the sheet pan.
  5. Bake in the preheated oven for 55 to 60 minutes, or until the meatloaf is cooked through and the vegetables are tender.
  6. Allow the meatloaf to rest for 5 minutes before slicing. Serve with the roasted vegetables.
