Easy Savory Fried Rice
This savory fried rice is perfect for a cozy winter evening. It's packed with vegetables and has a satisfying flavor that will quickly become a family favorite.
Ingredients
- 2 cups cooked rice, preferably day-old
- 2 tablespoons vegetable oil
- 1 cup frozen mixed vegetables, thawed
- 3 large eggs, beaten
- 1/4 cup soy sauce
- 2 green onions, chopped
- 1 teaspoon sesame oil
- Ground black pepper, to taste
- Flaky sea salt, to taste
Method
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the thawed mixed vegetables and stir-fry for 3-4 minutes until they are tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked and then mix them with the vegetables.
- Add the remaining tablespoon of vegetable oil to the skillet, then add the cooked rice. Stir everything together.
- Pour in the soy sauce and sesame oil, tossing to coat the rice and vegetables evenly.
- Stir in the chopped green onions and season with ground black pepper and flaky sea salt to taste.
- Serve the fried rice hot, garnished with extra green onions if desired.
