Easy Grilled Chicken with Vegetables

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Flaky sea salt, to taste
  • Black pepper, to taste
  • 2 cups mixed spring vegetables, such as bell peppers, zucchini, and asparagus

Method

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, combine olive oil, garlic powder, paprika, dried oregano, sea salt, and pepper.
  3. Brush the chicken breasts with the olive oil mixture, ensuring they're evenly coated.
  4. Grill the chicken for 6-7 minutes on each side or until internal temperature reaches 165°F (75°C).
  5. While the chicken is grilling, toss the mixed vegetables with a little olive oil, sea salt, and pepper.
  6. Place the vegetables in a grill basket or directly on the grill. Cook for 6-8 minutes, turning occasionally until they are tender.
  7. Remove the chicken and vegetables from the grill and let the chicken rest for a few minutes before slicing.
  8. Serve the grilled chicken with the vegetables on the side.
