Easy Fried Rice

Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 2 medium carrots, diced
  • 3 cloves garlic, minced
  • 2 cups frozen peas, thawed
  • 4 cups cooked white rice, preferably day-old
  • 3 tablespoons soy sauce
  • 2 large eggs, lightly beaten
  • 2 green onions, sliced
  • Salt, to taste
  • Black pepper, to taste

Method

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the diced onion and carrots to the skillet and sauté for about 5 minutes, until they start to soften.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the thawed peas and cooked rice to the skillet, stirring to combine with the vegetables.
  5. Pour the soy sauce over the rice and mix well, ensuring the rice is evenly coated.
  6. Push the rice mixture to one side of the skillet and pour the beaten eggs into the empty side.
  7. Scramble the eggs until they are fully cooked, then mix with the rice and vegetables.
  8. Season with salt and black pepper to taste, and garnish with sliced green onions before serving.
