Easy Chicken Noodle Soup

This comforting chicken noodle soup is perfect for a chilly winter evening. It's easy to make and full of flavor, ideal for a family dinner.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste

Method

  1. Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook until the vegetables are soft, about 5 minutes.
  2. Stir in the garlic and cook for another minute until fragrant.
  3. Add the chicken broth, shredded chicken, thyme, and bay leaf to the pot. Bring to a boil.
  4. Once boiling, add the egg noodles and reduce the heat to a simmer. Cook until the noodles are tender, about 8-10 minutes.
  5. Season with salt and pepper to taste. Remove the bay leaf before serving.
