Easy Cheesecake

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 3 8-ounce packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
Method
- Preheat your oven to 325°F (162°C). Grease a 9-inch springform pan.
- In a medium bowl, mix together graham cracker crumbs, melted butter, and 2 tablespoons sugar until well combined.
- Press the mixture into the bottom of the prepared springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese with an electric mixer until smooth.
- Add 1 cup of sugar and beat until fully incorporated. Mix in the vanilla extract.
- Add eggs, one at a time, beating on low speed until just blended after each addition.
- Pour the cream cheese mixture over the crust in the pan and spread evenly.
- Bake in preheated oven for 55-60 minutes, or until the center is set.
- Remove from the oven and let cool completely on a wire rack. Then refrigerate for at least 3 hours before serving.
